I have dabbled here and there and its been fun. I have actually been getting back into it lately, now that I have my pantry set up with all my laboratory ingredients 8-)

Harness the power of acid - I have read that you should include something sweet, something hot, something salty and something acidic to balance everything out. If I have lemons, I always add a dash of them to final meats.
Taste as you go - some herbs and spices are best added in the beginning while others toward the very end. Bay leaf is something that is added in the early part of the process and is then discarded later.

Kitchen tip-if you get fruit flies, which moist kitchens go at some point, make a trap: 1 jar, a chunk of bruised or rotting fruit, some apple cider vinegar & tight cling film on the top with a few small holes poked in the top. Tiny flies get in , but cannot get out. Very effective(; cleared out in 24 hours.

I made a fly trap bottle unintentionally, and by that I mean I had bought a new type of decanter to hold my triple sec, and the top was unfortunately loose enough that a ton of fruit flies were able to get in there. I only noticed it Thursday night when I picked up the bottle to make a margarita. Had to throw out a lot of booze, and I need a new container for the triple sec : ( Suffice it to say, I think your strategy is better, lol

My heart sinks at the thought of all the triple sec although I'm sure those were the happiest flies dying on the planet this week.
