Zucchini Frittata
2 cups sliced zucchini 4 eggs + 2 egg whites 1 clove garlic, minced 2 ounces of grated Parmesan cheese 1 tbsp olive oil 1/2 tsp chopped rosemary (fresh) salt and pepper
Preheat oven to broil
Whisk together the eggs, egg whites and rosemary Season with salt and pepper
Heat oil in skillet (medium-high) Add garlic (cook 1 minute) Add zucchini (cook and stir for 5 mins) Season with salt and pepper
Pour the egg mixture over the zucchini (cook 3 minutes)
Sprinkle cheese over the top. Then place the pan in the oven for about 3 minutes until the frittata rises and settles and the eggs aren’t runny.
TBH, you can easily add anything like onions, mushrooms, thyme, lemon, etc. And also use any other type of cheese. I just do simple stuff and try to use as few ingredients as possible and this was delicious.
