Today I'm slow-roasting a pork butt and making my own Lexington--style BBQ pork. Using soaked hickory chips smoldering in the oven to gets Smokey flavor. "pork butt" is actually pork shoulder, not the but Reason for naming the Boston Butt & Picnic Shoulder Q.I am currently in culinary school and wonder where the name "Boston Butt" came from. I know the location of the cut of meat, but was wondering about the history of the name specifically. Also, why is the shoulder of the hog sometimes called "Picnic Ham"? A. Well, one of your classmates may have beat you to the punch — seldom do we receive nearly identical questions from the same state on the same day. We took your questions to the experts at the National Pork Board and received the following answer: "In pre-revolutionary New England and into the Revolutionary War, some pork cuts (not those highly valued, or "high on the hog," like loin and ham) were packed into casks or barrels (also known as "butts") for storage and shipment. The way the hog shoulder was cut in the Boston area became known in other regions as "Boston Butt." This name stuck and today, Boston butt is called that almost everywhere in the US,… except in Boston. "Picnic ham" is a little challenging, even for the pork board folks. Generally, the shoulder is smoked, they say, which gives it a very ham-like flavor. Since picnic shoulder/ham is an inexpensive substitute for real ham (which only comes from the hind legs), they speculate that it would have been considered a good cut for casual dining — such as a picnic — rather than for use at a formal family dinner, such as Easter or Thanksgiving. The barrels the pork went into were called butts. This particular shoulder cut became known around the country as a New England specialty, and hence it became the "Boston butt."

Myh pulled pork is done and perfect! I did smolder some hickory chips in a metal container in the oven but liquid smoke can also be used. AFter a 3 hour braise in the recipe sauce, the pork fell apart and shredded easily with 2 forks. When I reheat it I will add some apple cider vinegar to balance the flavor a bit since it is a touch sweet for my taste. Recipe is just putting sauce ingredientsd together, heating up and then putting the whole thing in the oven to braise for 3 hours. Easy and delicious! Feeds 4-6 and can be frozen for up to 6 months. Sexual Chocolateextra sauce if needed. Now I am off to watch Stranger Things as promised since I have all this time leftover, lol.

Whole grain pumpkin waffles - delish! I made a batch and am having one every day till they are gone.
Warm waffle in oven/or toaster. I like mine topped with plain yogurt and diced apples braised in a little maple syrup with golden raisins.

Chili!
Meaty Wendy's Style Chili Ingredients 1 pound ground beef 1 medium yellow or white onion, finely diced 2 large celery stalks, finely diced 1 large green or red bell pepper, finely diced 2 teaspoons chili powder 3/4 teaspoon salt + more to taste 1 15-ounce can kidney beans, drained 1 15-ounce can pinto beans, drained 1 14.5-ounce can diced tomatoes 1 15-ounce can tomato sauce 1 cup beef broth, chicken broth, or water Preparation Heat a large Dutch oven or stockpot over medium-high heat. Add the beef, breaking it into small pieces with your hands as you add it to the pot. Cook, stirring occasionally to break the beef into small chunks, until fully browned. Spoon the beef into a bowl and set aside. Reserve the beef drippings in the pot. Reduce the heat to medium and add the onion, celery, and bell pepper to the pot. Cook, stirring occasionally, until the vegetables are very tender and translucent, about 10-15 minutes. Stir in the chili powder and 3/4 teaspoon salt, then return the beef to the pot along with the beans, diced tomatoes, tomato sauce, and broth. Cover and bring to a simmer, then uncover and reduce the heat to medium low. Cook for at least 1 hour to 90 minutes, stirring occasionally, to allow the flavors to meld. Taste and add more salt as needed. MAKE-AHEAD: Chili can be made up to 3 days in advance.
Note: We've eaten the chili in much less time than one hour. Simmered everything about 30 minutes last night. We use a red pepper instead of the green. The family prefers no tomato chunks so I give the diced tomatoes a whirl in the blender or use simply use crushed tomatoes if I have them in the pantry.
Very versatile - omit the meat or switch to ground turkey or vegan crumbles.

I'm sort of "making" creme fraiche at home- so easy: put one tablespoon of buttermilk into one cup of heavy cream, wait 12 hours. Needed for a birthday cake I am making for a client tomorrow.

I bought a fall crop CSA and tonight I used the last of it with tomatillo soup. My husband didn't care for it...too strong... so tomorrow I will use it as a sauce for enchiladas. Not giving up on these tomatillls.

Smart thinking nana! Thanksgiving has started early for me this year. A neighbor dropped off a huge wild turkey cleaned and plucked since they already have some to eat themselves. So I will go ahead and brine this bad boy tomorrow before cooking it up Sunday. I also have a turkey in the freezer I picked up on sale, so Christmas dinner is set too.

Anyone already planning for holiday cooking? Aside from Thanksgiving dinner (which I will be cooking it looks like) I normally bake cookies and make Needhams etc for gifts. I just found a recipe for cranberry pound cake that looks OMG delicious. So much for low carb. Damn.

I have wondered what one would taste like. nana- A stronger flavor than turkeys raised for the supermarket, and also more muscle since wild ones work harder. The brine will season and also remove the slight gamey -taste once an chunked-up onion and sliced lemon are placed in the cavity. Wild turkeys are usually smaller but our flock have gotten fat this year. Sexual Chocolate-yum!
