You people are killing me with this thread. I just had a pizza from Walmart. West Virginia had a a killer flood and my county hasn't had electricity since Thursday. I have electricity because I have a generator but just got phone and internet late last night. Now we don't have water because the water system got flooded. I know cry me a river. And it is going to rain tomorrow with a possibility of flash flooding.

I'm glad to know you are safe booksrbetter, despite the catestrophic flooding in your area. Ik sure the topic dies seem frivolous tonight; it was started as an icebreaker to get people to talk about themselves bit of course right now seems very self-indulgent or petty. I wish I could ship lots of food up there for you , your family and friends, to feed bodies and souls during this terrible time.

We had electricity, but no running water for a while, then a boil order on all water after it started working again. I had a lazy dinner tonight, made breaded chicken and french fries.

I live on a hill and not a hollow (pronounced holler by the way) and that made all the difference. It inconveniences me but the flash flood killed 24 people in West Virginia. Some of those were fairly close to me (less than 20 miles) and part of my friends and family were in danger that day. We get less than a minute of national news but the storm leveled some very nice small towns and destroyed homes and businesses. There was more emphasis on a kid getting bit by a shark. Guess floods are not all that interesting to the rest of America.

My family and friends made it through the storm safe though my baby sister and her husband got trapped on a road between tree slides. (I think you live in the mountains so you understand that trees slide down hillsides. ) They were on the road that borders the flooding river. The steep hillside borders the other side of the road. The trees just kept sliding and there was no where to go to. Then, an Asplund (professional tree cutter company) truck appeared in the twilight and cut those waiting on the road free. They were trapped again before they made it home but no one was hurt. It is going to rain her tomorrow and she swears she won't leave the hill. We all live on the same hill. Appalachia, you know. My pastor had a two hour drive home that night and it took him nine hours to get home. It's a wonderful thread. All that good food was making me hungry. We don't have water so we are basically eating sandwiches and pizzas. I was just being whiny. Pray for those who are searching for people in the debris. Let me tell you a true story. Old feeble lady (like ninety years old and crippled) lived in a house on a creek that was threatening to take her house with her in it. Her son was there but he didn't have a way to get his mother to higher ground. They were preparing to die when he looked out in the yard and a boat floated up to the front porch. They made it out.

The lack of water is a pain and you really don't want to bother with cooking.

booksrbetter - I've been reading and watching the news about WVA flooding. Heart goes out to all who have lost family, friends, pets and property. One of my friends used to live in one of the WVA 'hollers'. I wish I could think of the town. She has since moved to PA. I'm having roasted potatoes/veggies and leftover ribs. Time for a shopping trip.

... peaches won't be ready here till late July early August. We have just finished strawberry season and are in cherry season. Can't wait for peaches and sweet corn. Yummy!

This is some, but not all, of what I have canned since May-Jams, preserves & pickles . Now I'm continuing adding soups and stews. To have time for this during filming is mind-blowing.

Breaded catfish today. I think I finally found a breading mix I like (this is my 4th or 5th time frying catfish)
Cornmeal, flour, Garlic salt, parsley, Cayenne pepper. Fried in vegetable oil vs butter, even though the breading stuck better with the latter.

As blackberry season ends here, I bought several gallons more. Some frozen fur winter cobblers, others turning into jam. The berries are large & ripe.
I also bought another half-bushel of peaches and bourbon to make more peach-bourbon jam. Once the bourbon is gone I'll finish with peach-jalapeño preserves.

Jamarama V continues here as I have made three batches of blackberry jam today using an old Amish recipe and a modern, lower sugar recipe with a more floral and pure blackberry taste. If the ZA comes, my pantry is full of treats and goodies.
Some of these will be gifts for family and friends of course.
Still working on peach jalapeno, peach salsa and peach-bourbon jam. Plus Peach cobbler filling. Starting to look forward to seeing the bottom of the peach basket tbh. After this, the next fruit will be apples so a long break before holiday jam flavors and fruit butters begins. Thankfully.

Still jamming away although bean enchiladas sound delicious @honeytonkwoman! Had a good day yesterday- I had one jam recipe but it could not be canned, refrigerator jam only. I was able to engineer a way to safely can it for storage (verified via my COunty extension Agent first via phone) using an Amish canning method for delicate berries. Not a cure for a disease of course, but it felt great as my body of knowledge enabled me to solve a cooking issue and end up with a 12-jar case of blackberry jam.

Oooh, I made spinach enchilada verde with avocado last night - we make em once a week and dispel any notion of healthiness by pairing them with fresh lime margaritas We like them because they're super creamy and still more than sufficient in terms of veggies, and because the recipe can be so easily manipulated based on preferences on spice, cheese, etc. it's also super cheap to make. Thanks for the recipe Meggo358! I'll give these a try soon. Margaritas also a must with these or good Mexican beer. Power outage today meant I stirred together Sriracha spice mix ( Popcorn, meats, poultry, seafood, veg, etc) for holiday giving. Not expensive, easy yet much tastier than the new bottled blends which can be expensive or stale at market. Sharing the recipe which is somewhat clean eating IIRC based on use of coconut sugar over other types of sugar. lish, not sure if you would enjoy this so posting. I used Diamond Crystal Kosher salt dried Thai bird chilies.

I am terribly missing the blackberries back in the Pacific NW. I could go huckleberry icking, but I am unsure where to go and still a little unnerved by the bears. I'll get there. Heading back to Washington in another month and I am hoping the blackberries are still around.

nana , I hope you get plenty when you go back! Next summer you'll know all the best places around your new home, plus have buddies to go "aberrying with" I feel certain. At the Farmer's Market this week, bought another half-bushel of peaches -my last for this season. Peach salsa, peach butter & more peach pickles plus pie/cobbler filling. Also another gallon of blueberries for making blueberry butter & also blueberry syrups, with one maple-blueberry flavor. This way I can ship holiday treats before Thanksgiving and relax in December. If filming info remains so thin, I'll probably have time in 2016 to get 2017 holidays cards addressed, notes written and gifts wrapped too. I'll see myself out now.
